Ingredients
- 2 pounds baby potatoes, halved
- 1 cup plain Greek yogurt
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1/4 cup fresh dill, finely chopped
- Salt, to taste
- Black pepper, to taste
- 1/4 cup chopped green onions (optional)
Directions
Step 1:
Bring a large pot of salted water to a boil and cook potatoes until fork-tender. Drain and let cool slightly.
Step 2:
In a bowl, whisk together yogurt, olive oil, lemon juice, garlic, dill, salt, and pepper.
Step 3:
Place warm potatoes in a large bowl and pour the yogurt dressing over them.
Step 4:
Gently toss until potatoes are evenly coated.
Step 5:
Add green onions if using and mix lightly.
Step 6:
Chill for 20–30 minutes before serving for best flavor.
