Ingredients
- 12 oz pasta (penne, fettuccine, or spaghetti)
- 2 tablespoons olive oil or butter
- 10 oz mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup plain Greek yogurt
- 1/4 cup pasta cooking water (as needed)
- Salt, to taste
- Black pepper, to taste
- 1/2 teaspoon dried thyme or oregano
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
Directions
Step 1:
Cook pasta according to package instructions. Reserve 1/4 cup pasta water and drain.
Step 2:
Heat olive oil or butter in a large skillet over medium heat. Add mushrooms and sauté until golden and tender.
Step 3:
Add garlic and cook for 30 seconds until fragrant.
Step 4:
Lower heat and stir in yogurt, mixing gently to avoid curdling.
Step 5:
Add cooked pasta and reserved pasta water, tossing until coated in a creamy sauce.
Step 6:
Season with salt, pepper, and dried herbs.
Step 7:
Remove from heat and sprinkle with Parmesan if using.
Step 8:
Garnish with fresh parsley and serve warm.
