Ingredients
- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
For the Lime Dressing
- 3 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Salt, to taste
- Black pepper, to taste
Directions
Step 1:
Season shrimp with salt and pepper.
Step 2:
Heat olive oil in a skillet over medium heat and cook shrimp for 2–3 minutes per side until pink. Let cool slightly.
Step 3:
In a large bowl, combine avocados, cherry tomatoes, red onion, and cilantro.
Step 4:
In a small bowl, whisk together lime juice, olive oil, garlic, salt, and pepper.
Step 5:
Add shrimp to the salad bowl and drizzle with lime dressing.
Step 6:
Gently toss to combine without mashing the avocados.
Step 7:
Serve immediately or chilled.
