Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 3 cups cooked rice (preferably day-old)
- 2 eggs, lightly beaten
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt, to taste
- Black pepper, to taste
- 2 green onions, chopped
Directions
Step 1:
Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
Step 2:
Add shrimp and cook for 2–3 minutes per side until pink. Remove and set aside.
Step 3:
Add remaining oil to the skillet and sauté garlic until fragrant.
Step 4:
Push garlic to one side and pour in eggs. Scramble until just set.
Step 5:
Add cooked rice and stir-fry, breaking up any clumps.
Step 6:
Return shrimp to the pan and stir in soy sauce and sesame oil.
Step 7:
Season with salt and pepper, then toss until evenly combined.
Step 8:
Garnish with green onions and serve hot.
