Ingredients
- 1½ lbs white fish fillets (cod, halibut, or tilapia)
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1½ cups crushed tomatoes
- 1/2 cup tomato sauce
- 1/3 cup olives (black or green), sliced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and black pepper, to taste
- 1/4 teaspoon red chili flakes (optional)
- 1 tablespoon capers (optional)
- Fresh parsley, chopped (for garnish)
Directions
Step 1:
Season fish fillets with salt and pepper and set aside.
Step 2:
Heat olive oil in a wide pan over medium heat. Sauté onion until soft.
Step 3:
Add garlic and cook for 30 seconds until fragrant.
Step 4:
Stir in crushed tomatoes, tomato sauce, olives, oregano, basil, chili flakes, and capers. Simmer for 8–10 minutes.
Step 5:
Nestle fish fillets into the sauce. Cover and gently simmer for 8–12 minutes until fish is tender and cooked through.
Step 6:
Garnish with fresh parsley and serve warm.
