Ingredients
- 1 cup couscous
- 1 cup hot vegetable or chicken broth
- 1 lb shrimp, peeled and deveined
- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- Zest of 1 lemon
- 2 tablespoons lemon juice
- Salt and black pepper, to taste
- 1/4 teaspoon red chili flakes (optional)
- 2 tablespoons fresh parsley, chopped
Directions
Step 1:
Place couscous in a bowl, pour hot broth over it, cover, and let sit for 5 minutes. Fluff with a fork.
Step 2:
Heat olive oil and butter in a skillet over medium heat.
Step 3:
Add garlic and sauté for 30 seconds until fragrant.
Step 4:
Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side until pink.
Step 5:
Stir in lemon zest, lemon juice, and chili flakes.
Step 6:
Serve shrimp over couscous and garnish with fresh parsley.
