Tofu Veggie Rice Paper Rolls

Ingredients

  • 14 oz firm tofu, pressed and sliced
  • 1 tablespoon oil
  • Salt and black pepper, to taste
  • 8–10 rice paper sheets
  • 1 cup lettuce leaves
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1/2 red bell pepper, thinly sliced
  • Fresh herbs (mint, cilantro, basil)
  • Cooked rice noodles (optional)

Optional Dipping Sauce:

  • Sweet chili sauce or peanut sauce

Directions

Step 1:
Heat oil in a pan and lightly pan-fry tofu slices until golden. Season and set aside.

Step 2:
Prepare all vegetables and herbs.

Step 3:
Soak one rice paper sheet in warm water until soft.

Step 4:
Place lettuce, vegetables, tofu, herbs, and noodles (if using) in the center.

Step 5:
Fold sides and roll tightly like a wrap.

Step 6:
Repeat with remaining ingredients and serve with dipping sauce.
