Shrimp Spinach Quesadilla

Ingredients

  • 2 cups cooked shrimp, chopped
  • 2 cups fresh spinach, roughly chopped
  • 4 large flour tortillas
  • 1½ cups shredded mozzarella or Monterey Jack cheese
  • 1 tablespoon olive oil or butter
  • 1 clove garlic, minced
  • 1/2 teaspoon paprika or chili powder
  • Salt and black pepper, to taste
  • Optional: sour cream or salsa for serving

Directions

Step 1:
Heat olive oil in a pan over medium heat. Sauté garlic and shrimp with paprika, salt, and pepper for 2–3 minutes.

Step 2:
Add spinach and cook until just wilted. Remove from heat.

Step 3:
Place a tortilla on a flat surface. Sprinkle cheese evenly over half the tortilla.

Step 4:
Add shrimp-spinach mixture on top of the cheese, then sprinkle a little more cheese.

Step 5:
Fold tortilla in half and cook on a hot skillet until golden and crispy on both sides.

Step 6:
Remove, slice into wedges, and serve warm with dips if desired.
