Crispy Tofu Buddha Bowl

Ingredients

  • 14 oz firm tofu, pressed and cubed
  • 2 tablespoons cornstarch
  • 2 tablespoons olive oil
  • 1 cup cooked quinoa or brown rice
  • 1 cup roasted or steamed broccoli
  • 1 cup roasted sweet potatoes
  • 1/2 cup shredded carrots
  • 1/2 cup cucumber slices
  • Salt and black pepper, to taste

Optional Dressing:

  • 1/4 cup yogurt or tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt, to taste

Directions

Step 1:
Preheat oven to 400°F (200°C) or heat a skillet.

Step 2:
Toss tofu cubes with cornstarch, salt, and pepper.

Step 3:
Bake or pan-fry tofu with olive oil until crispy and golden.

Step 4:
Prepare vegetables and cook grains as needed.

Step 5:
Whisk dressing ingredients until smooth.

Step 6:
Assemble bowl: add grains, vegetables, crispy tofu, and drizzle with dressing.

Step 7:
Serve immediately or pack for meal prep.
