Ingredients
- 1½ cups plain yogurt (Greek or regular)
- 2 tablespoons olive oil
- 2 cloves garlic, finely minced
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- Salt, to taste
- Black pepper, to taste
- Optional: fresh parsley or dill, finely chopped
- Optional: grated Parmesan cheese
Directions
Step 1:
Bring yogurt to room temperature to prevent curdling.
Step 2:
Heat olive oil gently in a pan over low heat and sauté garlic until fragrant (do not brown).
Step 3:
Lower heat and slowly stir in yogurt, mixing continuously.
Step 4:
Add lemon zest, lemon juice, salt, and black pepper. Stir until smooth and creamy.
Step 5:
Remove from heat and mix in herbs or Parmesan if using.
Step 6:
Toss immediately with cooked pasta or use as a sauce for vegetables or protein.
