Ingredients
- 6 large eggs
- 1/4 cup milk or cream
- 1 cup fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan or feta cheese
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
- Salt and black pepper, to taste
- Optional: dried oregano or basil
Directions
Step 1:
Preheat oven to 375°F (190°C).
Step 2:
Heat olive oil in an oven-safe skillet. Sauté onion until soft, then add garlic.
Step 3:
Add spinach and cook until wilted. Stir in tomatoes briefly.
Step 4:
In a bowl, whisk eggs, milk, salt, pepper, and herbs.
Step 5:
Pour egg mixture into the skillet and gently stir.
Step 6:
Sprinkle cheese evenly on top.
Step 7:
Transfer skillet to oven and bake for 18–22 minutes until set and lightly golden.
Step 8:
Cool slightly, slice, and serve warm.
