Ingredients
For the Tofu
- 14 oz firm tofu, pressed and cubed
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- Salt and black pepper, to taste
For the Sweet & Sour Sauce
- 1/4 cup ketchup
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 3 tablespoons brown sugar or honey
- 1/2 cup pineapple juice or water
- 1 teaspoon cornstarch
For the Bowl
- 2 cups cooked white or brown rice
- 1/2 cup bell peppers, sliced
- 1/2 cup pineapple chunks
- 1/4 cup green onions, chopped
- Sesame seeds, for garnish
Directions
Step 1:
Toss tofu with cornstarch, salt, and pepper.
Step 2:
Heat oil in a pan and fry tofu until golden and crispy. Remove and set aside.
Step 3:
Whisk all sauce ingredients in a bowl.
Step 4:
In the same pan, add bell peppers and pineapple. Sauté briefly.
Step 5:
Pour in the sauce and cook until thickened.
Step 6:
Return tofu to the pan and toss until coated.
Step 7:
Serve over rice and garnish with green onions and sesame seeds.
