Shrimp Pesto Zoodles

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 4 medium zucchini, spiralized
  • 1/3 cup basil pesto
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • Cherry tomatoes, halved (optional)
  • Grated Parmesan cheese (optional)

Directions

Step 1:
Heat 1 tablespoon olive oil in a skillet and sauté garlic until fragrant.

Step 2:
Add shrimp, season with salt and pepper, and cook until pink and cooked through. Remove and set aside.

Step 3:
In the same skillet, add remaining olive oil and lightly sauté zucchini noodles for 2–3 minutes.

Step 4:
Return shrimp to the skillet and add pesto. Toss gently to coat.

Step 5:
Add cherry tomatoes if using and cook for 1 more minute.

Step 6:
Serve immediately, topped with Parmesan if desired.
