Tomatoes and Eggs

1 ripe tomato sliced

3 eggs

1 cup freshly graded cheddar cheese (very sharp)

Olive Oil

1 teaspoon salt and pepper

1 teaspoon Italian herb mix

Fry tomatoes on both sides 2-3 minutes per side

Pour eggs over tomatoes

Top with salt and pepper and Italian herb mix and the cheese cheese

Cover and cook for 10-12 minutes

Pour out on to a plate

Slice and eat
