Tuna and Broccoli Fried Rice

3 tablespoons vegetable oil

1 cup finely chopped white onion

1 small head of broccoli cut into bite size pieces (can use stems)

5 ounce can of tuna in oil, reserve oil

  1. garlic cloves pressed or finely chopped
  2. 4 cups cooked jasmine rice
  3. 3 ½ tablespoons soy sauce
  4. 2 tablespoons toasted sesame oil
  5. 1 teaspoon chili garlic sauce

In a large nonstick skillet, warm oil over medium heat.  Add onions and cook, stirring occasionally, until onions soften slightly, about 3 minutes.  Stir in broccoli, cover and cook until broccoli is slightly softened, stirring some.  About 5 minutes. 

Stire in tuna, with oil, garlic, cook for 4 minutes uncovered stirring occasionally.  Stir in cooked rice and cook for 3 minutes, stirring.

Add Soy sauce, sesame oil and chili garlic sauce.  Mix until wll combined.  Adjust heat and cook for 5 minutes stirring only once.

Remove from heat and serve.
