Creamy Pine Nut and Herb Cheese Balls

1 block (8 oz) cream cheese, softened
1/2 cup feta cheese, crumbled
1/4 cup Parmesan cheese, grated
2 tablespoons fresh dill, finely chopped
1 tablespoon fresh parsley, chopped
2 cloves garlic, minced
1/2 cup pine nuts, toasted (for coating)
1/4 cup panko breadcrumbs, toasted (for coating)
Salt and pepper, to taste
Olive oil (optional, for extra richness)
Crackers or fresh bread, for serving

In a mixing bowl, combine the cream cheese, feta, Parmesan, fresh dill, parsley, and garlic. Mix until everything is fully incorporated and smooth. Season with salt and pepper to taste.

Roll the cheese mixture into small balls, about 1 inch in diameter.
In a separate bowl, mix the toasted pine nuts and panko breadcrumbs.

Roll each cheese ball in the pine nut and breadcrumb mixture, ensuring they are evenly coated.

Place the coated cheese balls on a plate and refrigerate for at least 30 minutes to allow them to firm up.

Serve the cheese balls with crackers or fresh bread. Optionally, drizzle a little olive oil over the top for extra richness before serving.

Enjoy these savory cheese balls as a party appetizer or a fun snack!
