Cheesy Ground Beef Rice Casserole

1 C. Cooked rice

1 lb. Ground beef

1 C. Chicken broth

2 Onions , diced

1 C. Sour cream

2 tsp. Garlic powder

2 C. Shredded cheddar cheese

8 oz. Tomato sauce

1 C. Frozen carrots

1 C Frozen Pearl Onions

Salt and pepper and oregano to taste

  1. Place the onions and ground beef into a skillet over medium-high heat, and saute until the meat is browned and the onions have softened.
  2. Mix in the garlic, and saute for another 30 seconds. Drain the extra grease.
  3. Reduce the heat to medium, and season the mixture with oregano, salt, and pepper to taste.
  4. Mix in the tomato sauce, rice, carrots, onions, broth, and one cup of cheese. Simmer the mixture until the cheese has melted.
  5. Spread the mixture into a well-greased casserole dish, and bake for 15 minutes in a 250-degree preheated oven.
  6. Blend together the sour cream and remaining cheese in a bowl.
  7. Spread the sour cream mixture over the casserole, and bake for another 15-20 minutes.
