Easy Cheesy Ground Beef Enchiladas

1 lb. Ground beef

½ Onion chopped

3 Tbsp. Taco seasoning

¼ C. Water

2 C. Enchilada sauce

3 C. Cheddar cheese shredded

10-14 Soft corn tortillas warmed up

Sour cream and chopped parsley for garnish

  1. Preheat the oven to 350 degrees.
  2. Add the ground beef and onion to a skillet over medium high heat. Saute until the meat is cooked through and the onion is softened. Drain any excess grease.
  3. Reduce the heat to medium and stir in the water and taco seasoning. Saute another 5 minutes.
  4. Layer ½ of the enchilada sauce in the bottom of a 9×13 baking dish.
  5. Fill the tortillas with the meat filling and a sprinkling of cheese.
  6. Roll the tortillas closed and place them seam side down in the baking dish on top of the sauce.
  7. Top the tortillas with the remaining sauce and cheese.
  8. Bake for 20 minutes and garnish with sour cream and cilantro before serving.
