1 lb. Ground beef
½ Onion chopped
3 Tbsp. Taco seasoning
¼ C. Water
2 C. Enchilada sauce
3 C. Cheddar cheese shredded
10-14 Soft corn tortillas warmed up
Sour cream and chopped parsley for garnish
- Preheat the oven to 350 degrees.
- Add the ground beef and onion to a skillet over medium high heat. Saute until the meat is cooked through and the onion is softened. Drain any excess grease.
- Reduce the heat to medium and stir in the water and taco seasoning. Saute another 5 minutes.
- Layer ½ of the enchilada sauce in the bottom of a 9×13 baking dish.
- Fill the tortillas with the meat filling and a sprinkling of cheese.
- Roll the tortillas closed and place them seam side down in the baking dish on top of the sauce.
- Top the tortillas with the remaining sauce and cheese.
- Bake for 20 minutes and garnish with sour cream and cilantro before serving.
