Garlic Tomato Relish

  • cups ripe tomatoes (finely chopped)
    1/2 cup onion (finely chopped)
    6 cloves garlic (minced)
    3/4 cup apple cider vinegar
    1/3 cup sugar
    1 tbsp salt
    1/2 tsp black pepper
    1/2 tsp red pepper flakes (optional)
    1/2 tsp dried oregano
    1/2 tsp smoked paprika

    Instructions:

    1. In a large saucepan, combine tomatoes, onion, and garlic.
    2. Add vinegar, sugar, salt, black pepper, red pepper flakes, oregano, and smoked paprika.
    3. Stir well and bring to a gentle boil over medium heat.
    4. Reduce heat and simmer for 25–30 minutes, stirring occasionally.
    5. Cook until the mixture thickens and becomes rich and jam-like.
    6. Taste and adjust seasoning if needed.
    7. Remove from heat and let cool slightly.
    8. Transfer to jars and refrigerate until ready to use.

    Pro Tip:
    Roast the garlic beforehand for a deeper, sweeter flavor that takes this relish to the next level
