Creamy Chicken and Rice Casserole

One of Martha Stewart’s recipes that I have altered.  I think my adaptations make this meal a homerun for such an ordinary meal that is often made with canned soups, lots of salt or making an entire mess of your kitchen.

This variation contains fresh mushrooms, slow roasted chicken, peas, homemade stock and just a little bit of creme fraiche to give it a wonderful boost  of flavor.  This meal will come with a cucumber salad.  No onions or garlic in the main dish except a little in the homemade stock when it was cooked.
