Fresh Cucumber Yogurt Salad

  • 2 large cucumbers, thinly sliced or diced
  • 1 cup plain yogurt
  • 1 clove garlic, finely minced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh dill or mint, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil (optional)

Directions

Step 1:
Wash the cucumbers thoroughly and slice or dice them into bite-sized pieces.

Step 2:
In a medium bowl, whisk together the yogurt, minced garlic, lemon juice, salt, and black pepper until smooth.

Step 3:
Add the cucumbers to the yogurt mixture and gently toss to coat evenly.

Step 4:
Stir in the chopped dill or mint.

Step 5:
Drizzle with olive oil if using and mix lightly.

Step 6:
Chill for 10–15 minutes before serving for best flavor.
