Ingredients
12 ounces penne pasta
2 tablespoons olive oil
1 small onion, finely chopped
4 cloves garlic, minced
1 teaspoon red chili flakes (adjust to taste)
2 tablespoons tomato paste
1 can (28-ounce) crushed tomatoes
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
Salt, to taste
Freshly ground black pepper, to taste
1/4 teaspoon sugar (optional)
1/4 cup pasta cooking water (reserved)
Fresh basil or parsley, chopped (for garnish)
Grated parmesan cheese (optional, for serving
Directions
Step 1:
Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1/4 cup pasta water, then drain.
Step 2:
Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3–4 minutes until soft.
Step 3:
Add the minced garlic and red chili flakes. Cook for 30 seconds until fragrant.
Step 4:
Stir in the tomato paste and cook for 1 minute to enhance the flavor.
Step 5:
Add crushed tomatoes, oregano, basil, salt, black pepper, and sugar (if using). Simmer the sauce for 12–15 minutes until slightly thickened.
Step 6:
Add the cooked penne pasta and reserved pasta water to the sauce. Toss well to coat evenly.
Step 7:
Cook for another 1–2 minutes, then remove from heat.
Step 8:
Serve hot, garnished with fresh basil or parsley and grated parmesan cheese.
