Ingredients
- 1 pie crust (store-bought or homemade)
- 1 tablespoon olive oil
- 1 cup mushrooms, sliced
- 1 small onion, finely chopped
- 3 large eggs
- 1 cup milk or cream
- 1 cup shredded cheese (cheddar, Swiss, or mozzarella)
- Salt, to taste
- Freshly ground black pepper, to taste
- 1/4 teaspoon dried thyme (optional)
Directions
Step 1:
Preheat the oven to 375°F (190°C). Place the pie crust into a quiche or pie dish and set aside.
Step 2:
Heat olive oil in a skillet over medium heat. Add chopped onion and cook until soft.
Step 3:
Add sliced mushrooms and cook for 4–5 minutes until tender and lightly browned. Remove from heat and let cool slightly.
Step 4:
In a bowl, whisk together eggs, milk (or cream), salt, black pepper, and thyme.
Step 5:
Spread the mushroom mixture evenly over the pie crust. Sprinkle shredded cheese on top.
Step 6:
Pour the egg mixture over the mushrooms and cheese.
Step 7:
Bake for 35–40 minutes or until the center is set and the top is lightly golden.
Step 8:
Remove from oven, allow to cool slightly, then slice and serve.
