Shrimp and Spinach Cream Pasta

Ingredients

  • 12 ounces pasta (fettuccine or penne)
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1 cup fresh spinach
  • 1/2 cup grated parmesan cheese
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chopped fresh parsley (for garnish)

Directions

Step 1:
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

Step 2:
Heat olive oil in a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side until pink. Remove and set aside.

Step 3:
In the same skillet, add garlic and sauté for 30 seconds until fragrant.

Step 4:
Pour in heavy cream and milk, stirring gently. Let it simmer for 3–4 minutes.

Step 5:
Add spinach and cook until wilted.

Step 6:
Stir in parmesan cheese until the sauce becomes smooth.

Step 7:
Add cooked pasta and shrimp to the sauce. Toss well to combine.

Step 8:
Remove from heat and garnish with fresh parsley before serving.
