Rick’s Chicken Salad

This chicken salad is a new twist for chicken salad.  This chicken salad is made with fresh cooked chicken breast.  Then pulled off the bone and chopped, mixed with chopped celery, red onion, red and yellow sweet peppers and water chestnuts.  Held together with a homemade “mayo like sauce made with oil, vinegar and seasoning”.  This will have a croissant.  A side of cubed melon will also be included.
