Ingredients

  • 14 oz firm tofu, drained and crumbled
  • 2 tablespoons olive oil
  • 1/2 small onion, finely chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup spinach or kale
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 cup cooked rice, quinoa, or potatoes
  • Fresh herbs, for garnish (optional)

Directions

Step 1:
Heat olive oil in a skillet over medium heat. Sauté onion until soft.

Step 2:
Add bell peppers and cook for 2–3 minutes.

Step 3:
Add crumbled tofu, turmeric, paprika, garlic powder, salt, and pepper. Stir well.

Step 4:
Cook for 5–7 minutes until tofu is heated through and lightly golden.

Step 5:
Add spinach and cook until wilted.

Step 6:
Serve tofu scramble over cooked rice, quinoa, or potatoes and garnish with herbs.
