Apple Butter Cookies

1 cup unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
½ cup apple butter
2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

Add the egg and vanilla extract, mixing until fully incorporated.

Stir in the apple butter, blending until smooth.

Mix the dry ingredients:

In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.

Shape the cookies:

Scoop tablespoon-sized portions of dough and place them onto the prepared baking sheet, spacing them about 2 inches apart.
Optionally, flatten the dough slightly with the back of a spoon for a uniform shape.

Bake the cookies:

Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
