Authentic Polish Haluski Recipe (Fried Cabbage and Noodles with Bacon)

1 medium head of cabbage, chopped

12 oz egg noodles

6 slices bacon, chopped

3 tablespoons butter

1 large onion, finely chopped

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (optional)


  1. Cook noodles: Bring a large pot of water to a boil and add a pinch of salt. Cook the egg noodles according to package instructions until tender but not overcooked. Drain thoroughly and set aside.
  2. Fry bacon: In a large skillet over medium heat, cook the chopped bacon until it becomes crispy and golden. Stir occasionally for even cooking. Remove using a slotted spoon and leave the drippings in the pan.
  3. Sauté onion: Add the finely chopped onion to the skillet. Cook slowly until the onion softens and becomes translucent. Stir often to prevent burning.
  4. Add cabbage: Add the chopped cabbage into the skillet with the onion. Stir to coat it in the bacon drippings. Cook for about 15 minutes, stirring occasionally, until the cabbage becomes tender and slightly browned.
  5. Combine ingredients: Add the cooked egg noodles and crispy bacon back into the skillet. Mix gently to combine all ingredients evenly.
  6. Add butter: Place the butter into the skillet and allow it to melt completely. Stir to coat the noodles and cabbage evenly with the butter.
  7. Mix thoroughly: Continue mixing gently to ensure the ingredients are evenly distributed throughout the dish.
  8. Season: Add salt and pepper to taste. Adjust seasoning as needed.
  9. Serve: Remove from heat, garnish with fresh parsley if desired, and serve hot.

Notes  For added flavor, you can use kielbasa instead of or in addition to bacon.
