Christmas Italian Cheese Log

1 pound cream cheese, softened
1/2 pound grated Parmesan cheese
1/4 cup chopped fresh parsley
1/4 cup dried cranberries
1/4 cup chopped walnuts
1/4 teaspoon garlic powder
1/8 teaspoon red pepper flakes (optional)
Salt and pepper to taste

Combine Ingredients: In a large bowl, combine cream cheese, Parmesan cheese, parsley, cranberries, walnuts, garlic powder, red pepper flakes, salt, and pepper. Mix well until combined.

Shape the Log: Transfer the mixture to a piece of plastic wrap. Shape into a log, about 8 inches long and 2 inches in diameter. Wrap tightly in plastic wrap and chill for at least 2 hours, or overnight.

Serve: Unwrap the cheese log and slice into rounds. Serve with crackers or bread.

Personal Notes: You can add other ingredients to the cheese log, such as chopped green onions, sun-dried tomatoes, or chopped nuts.
For a spicier version, add more red pepper flakes.
Serve with a glass of wine or your favorite holiday beverage.
