1 pie crust (store-bought or homemade)
1 tablespoon olive oil
1 small onion, finely chopped
1 cup spinach, chopped
1/2 cup bell peppers, diced
1/2 cup mushrooms, sliced
4 large eggs
1 cup milk or cream
1 cup shredded cheese (cheddar, Swiss, or mozzarella)
Salt, to taste
Freshly ground black pepper, to taste
1/4 teaspoon nutmeg (optional)
Directions
Step 1:
Preheat the oven to 375°F (190°C). Place the pie crust into a quiche or pie dish and set aside.
Step 2:
Heat olive oil in a skillet over medium heat. Add the chopped onion and cook until soft.
Step 3:
Add mushrooms and bell peppers. Cook for 3–4 minutes until tender, then add spinach and cook until wilted. Remove from heat.
Step 4:
In a bowl, whisk together eggs, milk (or cream), salt, black pepper, and nutmeg.
Step 5:
Spread the cooked vegetables evenly over the pie crust. Sprinkle shredded cheese on top.
Step 6:
Pour the egg mixture over the vegetables and cheese.
Step 7:
Bake for 35–40 minutes or until the center is set and the top is lightly golden.
Step 8:
Remove from oven, let cool slightly, then slice and serve.
