Ingredients
- 1½ lbs boneless chicken (breast or thighs), cut into pieces
- 1 cup plain yogurt
- 2 tablespoons olive oil or butter
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- 4 cups fresh spinach
- 1/4 cup chicken broth or water
- 1 tablespoon lemon juice
- Fresh parsley or cilantro, for garnish
Directions
Step 1:
Season chicken with salt, pepper, cumin, and paprika.
Step 2:
Heat oil or butter in a skillet over medium heat. Sauté onion until soft.
Step 3:
Add garlic and cook until fragrant.
Step 4:
Add chicken and cook until lightly browned on all sides.
Step 5:
Lower heat and stir in yogurt and chicken broth, mixing gently to avoid curdling.
Step 6:
Simmer for 8–10 minutes until chicken is fully cooked.
Step 7:
Add spinach and cook until wilted.
Step 8:
Finish with lemon juice and garnish with fresh herbs.
