2 pound seedless grapes
2 pound tart apples, I use Granny Smiths
3/4 to 1 cup of sugar. Start with less, can add more later
1 cup white wine vinegar
1 cup cinnamon whiskey, seperated
1 lime zested and juiced
1 teaspoon ground cinnamon
pinch of salt
Place grapes and apples, sugar, vinegar and 1/4 cup whiskey in a large heavy bottomed pan. Bring to a boil.
Reduce the heat and simmer until mixture starts turning thick, about 2 or more hours. Add more whiskey along the way. Be sure to reserve 1/2 cup to add at the end.
Once thick, stir in lime zest and juice and cook. Add last of the whiskey and teaspoon of cinnamon and cook until very thick.
Cook and place in the fridge for flavors to come together. Do a final taste test and adjust seasoning if needed.
