2 cups zucchini (grated, and squeezed to drain)
1 handful fresh herbs (such as parsley, dill, mint; chopped)
2 green onions (chopped)
1/4 cup feta (crumbled)
1/2 cup flour (I like to use whole wheat)
1 egg
salt and pepper to taste or a little bit of Vegeta seasoning
2 tablespoons oil
Tzatziki Sauce:
1/2 cup plain Greek yogurt
1/2 cup cucumber, peeled, seeded, grated, and squeezed to drain
1 clove garlic, grated
1 tablespoon fresh dill, chopped
2 tablespoons lemon juice (~1/2 lemon)
salt and pepper to taste
Mix everything and let chill in the fridge for an hour.
Mix the zucchini, herbs, green onion, feta, flour, egg, salt and pepper or Vegeta seasoning in a bowl.
Heat the oil in a pan.
Spoon the zucchini mixture into the pan and cook until golden brown on both sides, about 4 minutes per side.
