2 hearts romaine, chopped
1/2 pound salami, cut into squares
1/2 pound provolone, cut into squares
8oz package marinated mini fresh mozzarella balls (include oil and seasonings)
1 cucumber sliced thin
1 red pepper, sliced into strips
1 small white onion, sliced into strips
1 cup Parmesan, cubed
1/2 pound pepperoni, cut into squares
Salt & Pepper
Dressing:
1 cup red wine vinegar
1/2 cup olive oil
1 tbsp garlic powder
1 tsp Italian seasoning
1 tbsp brown sugar substitute
Salt & pepper
Whisk together all ingredients for the salad dressing. Set aside.
In large bowl combine all other ingredients and mix well.
Add dressing when ready to serve.
Note: this makes ALOT. Great for a large group or cut in half for two days’ worth.
