Labneh Veggie Sandwich

Ingredients

  • 4 slices whole-grain or sourdough bread
  • 1/2 cup labneh
  • 1 tablespoon olive oil
  • 1/2 cup cucumber, thinly sliced
  • 1/2 cup tomato, sliced
  • 1/4 cup bell peppers, thinly sliced
  • 1/4 cup lettuce or spinach leaves
  • Salt and black pepper, to taste
  • Fresh mint or parsley, chopped

Directions

Step 1:
Lightly toast bread slices if desired.

Step 2:
Spread labneh evenly on each slice of bread.

Step 3:
Drizzle olive oil over the labneh and season with salt and pepper.

Step 4:
Layer cucumber, tomato, bell peppers, and greens.

Step 5:
Sprinkle fresh herbs on top.

Step 6:
Close the sandwich, slice, and serve fresh.
