4 cups flour
1 cup water (or according to flour type)
1 tbsp sugar
2 tbsp olive oil or vegetable oil
Pinch of salt
2 tbsp powdered milk
1 tsp instant yeast
Knead all ingredients until a smooth, non-sticky dough forms.
Let the dough rise for 30 minutes or until doubled in size.
Divide dough into medium-sized balls and flatten each ball into a 1cm thick sheet.
Dust with flour and let rest for at least 30 minutes.
Dip each sheet in water and then sesame seeds (optional).
Cook on a preheated, medium-to-high heat saj (griddle).
Wait for bubbles to form, then flip and cook until fully puffed.

I filled mine with falafel, cucumber pickles, mint, tomatoes, and tahini sauce.
