Ingredients
- 1 pound shrimp, peeled and deveined
- 1 cup cooked quinoa, farro, or brown rice
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/3 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper, to taste
- Fresh parsley or dill, chopped
Optional Dressing:
- 1/4 cup yogurt or tahini
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt, to taste
Directions
Step 1:
Season shrimp with paprika, oregano, salt, and pepper.
Step 2:
Heat olive oil in a skillet. Sauté garlic briefly, then cook shrimp until pink and cooked through. Set aside.
Step 3:
Prepare grains according to package instructions if not already cooked.
Step 4:
In a bowl, arrange grains, tomatoes, cucumber, and red onion.
Step 5:
Top with cooked shrimp and crumbled feta.
Step 6:
Drizzle with dressing if using and garnish with fresh herbs.
Step 7:
Serve warm or at room temperature.
