Ingredients
- 12 oz pasta (linguine, spaghetti, or penne)
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt, to taste
- Black pepper, to taste
- 1 cup basil pesto (store-bought or homemade)
- 1/4 cup pasta cooking water (as needed)
- 1/4 cup grated Parmesan cheese
- Cherry tomatoes, halved (optional, for garnish)
Directions
Step 1:
Cook pasta according to package instructions. Reserve 1/4 cup pasta water and drain.
Step 2:
Heat olive oil in a large skillet over medium heat.
Step 3:
Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side until pink. Remove and set aside.
Step 4:
Add garlic to the skillet and sauté briefly until fragrant.
Step 5:
Return shrimp to the skillet and add cooked pasta.
Step 6:
Stir in pesto and pasta water, tossing until evenly coated.
Step 7:
Remove from heat and sprinkle with Parmesan cheese.
Step 8:
Garnish with cherry tomatoes if desired and serve warm.
