Shrimp Poke Bowl

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked sushi rice or jasmine rice
  • 1 tablespoon oil
  • Salt and black pepper, to taste
  • 1 avocado, sliced
  • 1 cup cucumber, diced
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Dressing:

  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar or lime juice
  • 1 teaspoon honey or sugar

Directions

Step 1:
Cook shrimp in a skillet with oil, salt, and pepper for 2–3 minutes per side until pink. Let cool slightly.

Step 2:
Prepare rice and arrange it in serving bowls.

Step 3:
Top rice with shrimp, avocado, cucumber, carrots, and green onions.

Step 4:
Whisk dressing ingredients together and drizzle over the bowl.

Step 5:
Sprinkle with sesame seeds and serve immediately.
