Sun Dried Tomato Herb Dip

You can use this as an appetizer or thin a little, you have a great salad dressing

Ingredients

9  Sun-dried tomatoes, halved and drained of excess oil

8 Ounces cream cheese, softened

1/4 Cup mayonnaise

1/4 Cup sour cream

2 garlic cloves, minced

1 Tablespoon olive oil

1 Tablespoon red wine vinegar

1/2 Teaspoon salt

1/2 Teaspoon pepper

1/4 Cup fresh parsley, finely chopped

1/4 Cup fresh chives, finely chopped

3/4 Cup water

2 Tablespoons fresh parsley leaves for garnishing

Directions

Step 1: Place sun-dried tomato halves in medium-sized saucepan, and cover with water. Simmer over medium-low heat for approximately five minutes, or until water evaporates.

Step 2: Add sun-dried tomatoes to a food processor or blender along with all other ingredients, and process until smooth.

Step 3: Refrigerate for one hour or until chilled. Garnish with additional chopped sun-dried tomatoes and parsley if desired, and serve with bread, crackers, or veggie sticks.
