- 1 lb boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 4 cloves garlic, minced
- 1½ cups cherry tomatoes, halved (or canned diced tomatoes)
- 1/2 cup tomato puree or crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon chili flakes (optional)
- Salt, to taste
- Black pepper, to taste
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup chicken broth (optional)
- Grated Parmesan cheese, for serving (optional)
Directions
Step 1:
Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper.
Step 2:
Sear chicken on both sides until golden. Remove and set aside.
Step 3:
In the same skillet, sauté onion until soft, then add garlic and cook until fragrant.
Step 4:
Add tomatoes, tomato puree, oregano, and chili flakes. Simmer for 5–7 minutes.
Step 5:
Return chicken to the skillet, cover, and cook until chicken is fully cooked and tender.
Step 6:
Stir in fresh basil, adjust seasoning, and serve hot.
