Ingredients
- 2 tablespoons olive oil or butter
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups fresh tomatoes, chopped (or canned tomatoes)
- 1 cup tomato purée
- 1½ cups vegetable or chicken broth
- Salt and black pepper, to taste
- 1/2 teaspoon sugar (optional)
- 1/2 cup heavy cream
- 1/4 cup fresh basil leaves, chopped
- Croutons or bread, for serving (optional)
Directions
Step 1:
Heat olive oil or butter in a pot over medium heat. Sauté onion until soft.
Step 2:
Add garlic and cook until fragrant.
Step 3:
Add tomatoes, tomato purée, broth, salt, pepper, and sugar. Simmer for 15–20 minutes.
Step 4:
Blend the soup until smooth using a blender or immersion blender.
Step 5:
Return soup to the pot, stir in cream, and heat gently without boiling.
Step 6:
Add fresh basil, adjust seasoning, and serve warm.
