Tomato Cream Baked Cod

Ingredients

  • 4 cod fillets
  • 1 cup crushed tomatoes
  • 1/2 cup heavy cream
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Fresh basil or parsley, for garnish
  • Optional: grated Parmesan for topping

Directions

Step 1:
Preheat oven to 375°F (190°C). Lightly grease a baking dish.

Step 2:
Heat olive oil in a pan. Sauté onion and garlic until soft and fragrant.

Step 3:
Add crushed tomatoes, cream, paprika, oregano, salt, and pepper. Simmer for 5 minutes.

Step 4:
Place cod fillets in the baking dish and pour tomato cream sauce over them.

Step 5:
Bake uncovered for 20–25 minutes, until cod flakes easily with a fork.

Step 6:
Garnish with fresh herbs and serve warm.
