Ingredients
- 2 cups crushed or diced tomatoes
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- Salt, to taste
- Black pepper, to taste
- 4 large eggs
- 1/2 cup crumbled feta cheese
- Fresh parsley or basil, chopped (for garnish)
Directions
Step 1:
Preheat oven to 375°F (190°C).
Step 2:
Heat olive oil in an oven-safe skillet over medium heat. Add garlic and sauté until fragrant.
Step 3:
Stir in tomatoes, oregano, salt, and pepper. Simmer for 5–7 minutes until slightly thickened.
Step 4:
Make small wells in the tomato sauce and crack eggs into each well.
Step 5:
Sprinkle feta cheese evenly over the dish.
Step 6:
Transfer skillet to oven and bake for 12–15 minutes, until egg whites are set but yolks are still slightly runny.
Step 7:
Remove from oven, garnish with fresh herbs, and serve warm.
