Ingredients
- 1 cup red lentils, rinsed
- 1½ cups crushed tomatoes
- 1 cup coconut milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon turmeric
- 3 cups vegetable broth or water
- Salt and black pepper, to taste
- Fresh cilantro or parsley, chopped (for garnish)
Directions
Step 1:
Heat olive oil in a pot over medium heat. Sauté onion until soft.
Step 2:
Add garlic, cumin, paprika, and turmeric. Cook until fragrant.
Step 3:
Stir in crushed tomatoes and lentils.
Step 4:
Pour in vegetable broth and bring to a gentle boil.
Step 5:
Reduce heat and simmer for 20–25 minutes until lentils are tender.
Step 6:
Stir in coconut milk and simmer for 5 more minutes.
Step 7:
Season with salt and pepper, garnish with herbs, and serve hot.
