Ingredients
- 1 cup dried brown or red lentils, rinsed
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1 can (14 oz) diced tomatoes
- 3 cups vegetable broth
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon lemon juice
- Fresh parsley or cilantro, chopped (for garnish)
Directions
Step 1:
Heat olive oil in a large pot over medium heat.
Step 2:
Add onion and sauté until soft and translucent.
Step 3:
Add garlic, cumin, paprika, and coriander. Cook until fragrant.
Step 4:
Stir in lentils, diced tomatoes, and vegetable broth.
Step 5:
Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes until lentils are tender.
Step 6:
Season with salt, pepper, and lemon juice.
Step 7:
Garnish with fresh herbs and serve hot.
