Tuna Cakes

4 cans of white tuna in water

Greek plain yogurt (half a cup)

red, yellow and orange bell peppers (half of each, or more if you like)

1 small onion

3oz of shredded cheese (that you like)

3 tablespoons of mayonnaise

2 whole eggs

Half a cup of Panko breadcrumbs

old Bay seasoning (to taste) I do about 2 to 3 tablespoons

mix everything well.

Use 1/4 of a cup to measure the tuna mixture and form that into a patty. preheat the skillet add olive oil.

It doesn’t have to be a lot of oil, You just don’t want the fish to stick to the pan. Cook it on low to medium heat until golden on each side.
