Vegan Mayonnaise

A much healthier mayonnaise

Ingredients

3/4 to 1 cup raw cashews soaked in water for 8+ hours

2-4 cloves garlic or roasted garlic

1 tablespoon lemon

1 1/2 tablespoons Dijon mustard

3 tablespoons liquid from canned chickpeas

1 cup vegetable oil

1/2 cup extra virgin olive oil

Kosher salt and freshly ground pepper.

Directions

Step 1: Blend all together except olive oil.  Slowly add oil in a steady stream.

Step 2: Keeps up to one week
