Ingredients
- 1½–2 lbs chicken pieces (thighs, drumsticks, or whole chicken cut up)
- 1 cup plain yogurt
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 teaspoons paprika (smoked or sweet)
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- Salt, to taste
- 1 tablespoon lemon juice
- Fresh parsley or cilantro, for garnish
Directions
Step 1:
In a bowl, mix yogurt, olive oil, garlic, paprika, cumin, salt, pepper, and lemon juice.
Step 2:
Add chicken pieces and coat thoroughly. Marinate for at least 2 hours or overnight for best flavor.
Step 3:
Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
Step 4:
Arrange marinated chicken on the tray in a single layer.
Step 5:
Roast for 40–45 minutes, turning once, until chicken is golden and fully cooked.
Step 6:
Garnish with fresh herbs and serve hot.
